It's the season for giving, receiving and indulging. In the spirit of these holiday traditions, Davidson's Safest Choice Eggs asked me to create an eggnog recipe using their pasteurized eggs - and they're giving you a chance to win two prize packs valued at more than $500! Check out my recipe for White Chocolate Peppermint Eggnog below and keep reading to see how you can win some fabulous prizes from Safest Choice Eggs.
Why use Safest Choice Eggs?
Safest Choice offers peace of mind when recipes (like eggnog) call for raw or undercooked eggs because their eggs are pasteurized to reduce the risk of Salmonella. The majority of eggs sold in grocery stores aren't pasteurized. Find out where Safest Choice is sold near you.
If you're not into the traditional taste of eggnog, take a crack at this drink. The addition of peppermint makes for a lighter taste and minimizes the egg flavor.
White Chocolate Peppermint Eggnog
12 Safest Choice pasteurized eggs
1 1/2 cup granulated sugar
1 quart heavy cream
2 cups whole milk
1 teaspoon pure peppermint extract
2 tablespoon vanilla extract
candy canes for garnish
3 ounces white chocolate
2-3 cups bourbon, brandy or Peppermint Schnapps
Place egg yolks in a large bowl and beat with an electric mixer until combined. Gradually add sugar, beating until mixture is pale and yellow. Stir in cream and milk, then brandy, vanilla and peppermint extract. Cover and refrigerate until chilled.
For garnish, process candy canes in a food processor until finely crushed. Next, melt chocolate in a heatproof bowl set over a pan of simmering water. Let cool 5 minutes. Dip rim of each cup into melted chocolate, then crushed peppermint. Refrigerate until set.

It might be frigid outside, but Remedy Food + Drink's new winter cocktails will keep you toasted all season. Since opening in June 2012, this Waldo gastropub has become a favorite spot of mine for unique, handmade drinks made by some of the best craft cocktail experts in town. General Manager Stew Hemmer and his team of bartenders concoct a new drink menu each season and this winter's offerings are a hit. Here's a look at some of my favorites:
The "Gossip Girl" ($9) with Brokers gin, prickly pear syrup, lemon juice and Segura Viudas (sparkling wine) is a tasty twist on the traditional daytime cocktail. I especially enjoyed the light hints of citrus and fruit. It's pretty, pink and potent.
For something rich and comforting, try the "Trinidad Latte" ($9) made with Plantation Over Proof Rum, toasted almond syrup, specialty coffee and house shaken cream.
The layer of thick homemade whipped cream and freshly grated nutmeg seals the deal.
Remedy's "Missing Summer" ($9) cocktail is a new spin on a summertime favorite, the "Lily Pad." Stew and his team tweaked the original drink to tailor it for the season. The new drink is made with Domaine de Canton liqueur, Pimms, strawberry, basil shrub and lemon juice. I suggest putting your nose right up to the glass - the smell alone is intoxicating. Each sip begins with hints of strawberry and a strong spicy ginger aftertaste.
Remedy's latest libations are not only pleasing to look at, but just as pleasant going down. So with holiday celebrations in mind, I suggest making this your next destination for a drink.
